This knowledge base article demonstrates how, through customisation, a sales order quantity can be easily changed to default from 0 to 1.

In the customisation you need to select the field quantity and navigate to the attributes tab and select customize attributes.

Copy the original attributes and make the modification as shown highlighted below.

You need to choose the option replace original and then save the changes made and publish the customisation. Once published the sales order quantity will default to 1 not 0.
